The bread should be soft and chewy, and Pappa Geno's does a good job with that. The meat in an original cheesesteak is supposed to be cheap, thinly sliced and quickly grilled. Tender. Greasy. Wonderful. Pappa Geno's does a good job with that too. But -- there's enough black pepper to float a battleship! And there's nothing authentic about that!
