I'm using StellarStellaris and StellarPerformance. The first one changes the frequency of ticks and calculations in the game to be easier for the CPU, the second one is a simple graphics mod that lowers the resolution of textures, making it easier for both CPU and GPU to handle large amounts of ships. Preferably without making the AI even worse.
